I like following Almost Makes Perfect on Instagram -- she has cute style, her kid is funny, and the overall color palette of her blog is super calm and satisfying to look at.

We tried making it a couple times. I'm very pleased to report that the salad always turns out so good!
She wasn't lying about how easy it is to prepare, assuming the ingredients are already on-hand. Not everyone has sesame oil or rice vinegar handy. You can probably get away with swapping in a different kind of vinegar, but you shouldn't skip the sesame oil.

That's in. Five ingredients, combined all at once. She removes the cucumber peel and seeds, I keep both (out of laziness) and the end result is still totally delicious :)
We added crushed salted peanuts once -- it was a very good call.
Anyway, this salad isn't the most beautiful dish you've ever seen, but it's super light and tasty and refreshing. Probably great as a side with sushi. I'll try it with sesame seeds next time, or chili flakes. If you give the recipe a shot, I'd love to hear what you think!
